Official Guide to Coffee pH Levels

Understanding the data behind truly low acid coffee.

Marketing claims are easy to make, but real low acid coffee is backed by science. At Mavericks, we believe in radical transparency. We don't just tell you our coffee is easier on your stomach; we show you the independent laboratory data that proves it.

How to Read This Chart (The "Logarithmic" Scale)

The most important thing to understand about pH is that it is logarithmic, not linear. This means every single whole number decrease on the scale (e.g., from 6.0 down to 5.0) represents a tenfold (10x) increase in acidity.

A standard grocery store coffee typically has a pH of around 4.8. Our Dark French roast has a pH of 6.39. While that may look like a small difference on paper, chemically, it means our coffee is over 97% less acidic than that standard cup.

Why pH Matters for Your Body

It's not just about numbers; it's about how you feel. Highly acidic coffee (low pH) can wreak havoc on your body in three primary ways:

  • Digestive Distress: Acids like chlorogenic and quinic acid can trigger heartburn, acid reflux (GERD), and irritate IBS symptoms, interstitial cystitis, and Barrett's Esophagus and other conditions.
  • Bitter Flavor: Volatile Acid Compounds often masks the natural, rich flavors of the coffee bean and are flavor precursors, leading to a sharper, more bitter aftertaste.

"Why Have The Acid If You Don't Have To"

How We Achieve These Scores (Naturally)

We don't use chemicals, additives, or treatments to lower acidity. Our secret is patience.

Most commercial coffee is "flash roasted" in under 12 minutes, which locks acidic compounds inside the bean. Mavericks simply Slow Roasts the coffee at higher temperatures for a much longer duration. This extended exposure to controlled heat naturally breaks down and burns off harmful and irritating acids before they ever reach your cup, all while developing a richer, smoother flavor profile.

Plus, all Mavericks Coffees are Certified Organic and Non-GMO.

Mavericks Coffee pH Score Chart

The following data was verified by an independent third-party laboratory. We have compared our pH scores against a standard national coffee baseline of pH 4.8 to calculate the total acid reduction you experience in every cup.

A Note on Our Scores: Coffee is a natural, agricultural product. Our pH scores are based on 3rd-party lab tests, but final scores can fluctuate slightly from batch to batch and roast to roast. The values in this chart represent levels of "up to" that score (e.g., up to 6.39 for Dark French) based on independent analysis.

*Acid reduction calculated based on a standard national coffee brand baseline of pH 4.8. Because the pH scale is logarithmic, even small numerical increases represent significant reductions in actual acidity.

Independent Laboratory Verification

To ensure absolute accuracy for our customers, all our coffees are tested by an independent, third-party laboratory. These results are based on AOAC 970.21a methodology using a Mettler Toledo SevenCompact™ pH/Ion S220 meter
